Quick and Easy Banana Pancakes


What to make on an easy weekend morning? Feeling like something sweet and tasty that won’t be loaded with sugar or fats? Want something that will pick you up for an energetic day? These will do the trick!

Clearly I love cooking with bananas, they’re a great source of sweetness, good carbohydrates to get you going, high in potassium and vitamin B6 for fluid regulation and energy metabolism (a.k.a perfect for exercise), and they are so versatile.

These pancakes were delicious with peanut butter (obviously) and maple syrup

Recipe: makes 4 large pancakes (serves 1)
1 medium ripe banana
1/2 cup self raising wholemeal flour
1 egg
40g yoghurt
Dash of cinnamon
Dash of vanilla essence

1. Pre-heat medium pan on med-low heat
2. Mash banana in bowl
3. Mix flour with banana
4. Add egg and yoghurt till well mixed.
5. Add flavour and extras (I wold have loved to add choc-chips but we didn’t have any )
6. Cook till golden brown on each side.
