Breakfast. Some people skip it, some people just grab something and run. To me, it’s the most beautiful meal of the day. I don’t function without it. Most mornings I wake up with hunger gnawing at me, grumbling and rumbling, pushing me into the kitchen.
But not everyone has time to make toast with eggs and bacon and grilled tomato and sauteed mushrooms and spinach… sorry, food heaven.
So here’s my favourite go to breakfast.
It takes around 5 minutes to make, and is simple to clean up. Plus, it has protein, fats, and oh-so-delicious carbs to get you through the day.
Egg-white Berry Oats.
1/2 cup dry oats.
1/2 cup egg whites
3/4 – 1 cup frozen berries of your choice.
Topping of your choice (nut butter, coconut flakes, honey, salted peanuts)
1- Place oats and egg-whites into microwave safe bowl, add water until 1cm above the oats. Mix well.
2- Place in microwave for 2 minutes. Then in 20-30 second intervals until cakey. Let rest.
3- Place berries into microwave safe container and cook for 2 minutes. Pour on-top of oats.
4- Add topings of your choice.
